Malt Donkey Institute works with your brand…
Step 1
We begin by studying your soil in detail using our on house research lab, testing structure, nutrients, and water balance.
This tells us how your land will grow barley, and helps us match the right variety to your terroir. It’s the foundation for flavour that lasts.
Step 2
Growing without interference
Our barley growing program is designed to fit seamlessly into your existing process.
We take a no-interventionist approach, requiring little to no additional water and with no disruption .
All equipment is brought in by us, and every step is handled with care to avoid damaging or interfering with your ongoing growing programs.
The aim is simple: add value to your land without changing how you already farm it.
Step 3
MALT YOUR BARLEY
At our malting facility, we use world-first equipment that lets us create rare specialty malts other maltsters can’t.
This system allows us to malt in small, identity-preserved batches, making it possible to explore terroir in ways that were never achievable at scale before.
Step 4
Develop Brew Recipe
In our Brew Lab, we work with you to design a recipe that reflects your brand, using barley grown on or near your property. With over 600+ recipe frameworks built for palate length and complexity, we can tailor expressions that sit naturally alongside your existing lineup.
We start small: an 8L batch to test flavour, balance, and style. From there, we refine through tasting and feedback before scaling up to commercial production, ensuring the final ale is true to both your land and your brand.
Step 5
Bottling and DISTRIBUTION
We handle all bottling and labelling in-house, giving you complete creative freedom on bottle shape, packaging, and design. Using our exclusive nitrogen dosing system and signature staple clip finish, every release is bottled with precision and consistency.
From there, we manage the full distribution process, ensuring your Origin Ale arrives ready to represent your brand at the highest standard.
